  • 2 tbsp vegetable oil
  • 1 lb bone-in, skinless chicken thighs
  • 1 cup diced ham
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups frozen corn kernels
  • 2 cups diced tomatoes
  • 1 cup frozen lima beans
  • 4 cups chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • 2 tbsp chopped fresh parsley (for garnish)

Cooking Steps:

  1. Sear the Chicken:
    • Heat vegetable oil in a large pot over medium-high heat.
    • Season chicken thighs with salt and pepper and sear them in the pot for 4-5 minutes per side until browned.
    • Remove the chicken and set aside to cool. Shred the chicken once cooled, discarding the bones.
  2. Prepare the Stew Base:
    • In the same pot, add diced ham and cook for 2-3 minutes until lightly browned.
    • Add chopped onion and minced garlic, cooking for 5 minutes until softened.
  3. Simmer the Stew:
    • Add the shredded chicken, corn, diced tomatoes, lima beans, chicken broth, Worcestershire sauce, hot sauce (optional), paprika, thyme, salt, and pepper.
    • Stir to combine and bring to a simmer.
    • Reduce heat to low and simmer for 1 hour, stirring occasionally.
  4. Finish & Serve:
    • Taste and adjust seasoning as needed.
    • Garnish with fresh parsley and serve hot.
