Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 lb boneless, skinless chicken breast (diced)
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 2 eggs, beaten
  • ½ cup diced carrots
  • ½ cup peas
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp ginger, minced
  • ½ tsp white pepper
  • Salt to taste

Cooking Steps:

  1. Prepare Ingredients:
    • Dice the chicken and vegetables, mince the garlic and ginger, and beat the eggs.
  2. Cook the Chicken:
    • Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
    • Add chicken, season with salt and white pepper, and cook for 5–6 minutes until browned and fully cooked. Remove from the pan.
  3. Scramble the Eggs:
    • Add ½ tbsp oil to the same pan. Pour in the beaten eggs and scramble until just set. Remove and set aside.
  4. Sauté Vegetables:
    • Heat the remaining ½ tbsp oil and sesame oil.
    • Add garlic, ginger, carrots, and peas. Sauté for 2–3 minutes until slightly tender.
  5. Stir-Fry the Rice:
    • Add the cooked rice, breaking up any clumps. Stir-fry for 2–3 minutes.
  6. Add Chicken & Sauce:
    • Return chicken and scrambled eggs to the pan.
    • Pour in soy sauce and oyster sauce, stirring to coat evenly.
  7. Finish & Serve:
    • Toss in green onions, mix well, and remove from heat.
    • Serve hot and enjoy!
