Ingredients

  • 1 salmon fillet (~5–6 oz)
  • 1 tbsp white miso paste
  • 1 tsp soy sauce
  • 1 tsp honey or maple syrup
  • 1/2 tsp rice vinegar
  • 1/2 tsp sesame oil
  • 1/2 cup cooked farro
  • 1/2 cup sautéed greens (spinach, kale, or bok choy)
  • 1/4 cup shredded carrot or sliced cucumber
  • 1 green onion, sliced
  • Optional toppings: sesame seeds, sriracha, lime wedge

Notes

Cooking Steps:
  1. Preheat oven to 400°F (200°C).
  2. Mix miso paste, soy sauce, honey, rice vinegar, and sesame oil in a small bowl.
  3. Place salmon on foil or a small baking dish and brush generously with miso glaze.
  4. Bake salmon for 12–15 mins, or until flaky and glazed.
  5. While baking, cook farro (if not pre-cooked) and sauté greens with a bit of oil and garlic.
  6. Assemble bowl: layer farro, top with greens, carrots or cucumbers, and salmon. Garnish with green onion, sesame seeds, or sriracha.
