- 1/2 cup dry pasta (penne or fusilli)
- 1/2 cup canned butter beans, drained and rinsed
- 1 clove garlic, minced
- 1 tbsp sun-dried tomatoes, chopped
- 1/4 tsp red pepper flakes (optional)
- 1/4 tsp dried oregano
- 1/4 cup heavy cream (or coconut cream for dairy-free)
- 2 tbsp grated parmesan cheese (or nutritional yeast)
- 1 tsp olive oil
- Salt & pepper to taste
- Fresh basil or parsley for garnish (optional)
