Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 sheet nori (seaweed)
  • 1/4 cup thinly sliced mango
  • 1/4 cup thinly sliced cucumber
  • 2 ounces cooked shrimp (optional)
  • 1 tablespoon mayonnaise
  • 1 teaspoon sriracha (optional for spicy)
  • 1 tablespoon sesame seeds
  • Soy sauce for serving

Cooking Steps:

  1. Prepare Sushi Rice:
    Rinse the sushi rice under cold water until it runs clear. Cook it in a rice cooker with 1 1/4 cups water. Once cooked, transfer to a bowl and mix in rice vinegar, sugar, and salt. Let it cool to room temperature.
  2. Prepare Sushi Rolling Station:
    Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down.
  3. Spread Rice:
    Wet your fingers with water to prevent sticking, and evenly spread a thin layer of rice over the nori, leaving about 1 inch at the top of the sheet.
  4. Add Fillings:
    Place a few slices of mango, cucumber, and shrimp (if using) along the center of the rice.
  5. Roll the Sushi:
    Carefully lift the bamboo mat and nori, rolling it tightly while pressing gently. Once rolled, seal the edge with a bit of water.
  6. Slice the Roll:
    Using a sharp knife, slice the roll into 6-8 pieces. Garnish with sesame seeds.
  7. Serve:
