- 1 cup lentils (green or brown)
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp cumin
- ½ tsp turmeric
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 1 bay leaf
- 2 cups water
- 1 tbsp lemon juice (optional)
Cooking Steps:
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened (5 minutes).
- Stir in garlic, cumin, turmeric, and paprika, and cook for another minute until fragrant.
