Ingredients

For the Pasta:

  • 12 oz pasta (penne, spaghetti, or fettuccine)
  • 1 tbsp salt (for boiling water)

For the Elk Sauce:

  • 1 lb ground elk meat
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • ½ cup beef or vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper (to taste)
  • ½ cup grated Parmesan cheese (for garnish)
  • Fresh parsley (chopped, for garnish)

Notes

Cooking Steps:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook pasta according to package instructions until al dente.
    • Drain and set aside.
  2. Prepare the Elk Sauce:
    • Heat olive oil in a large skillet over medium heat.
    • Add diced onions and cook until soft (about 3 minutes).
    • Stir in minced garlic and cook for another 30 seconds.
    • Add ground elk and cook until browned, breaking it up as it cooks (5–7 minutes).
  3. Simmer the Sauce:
    • Stir in tomato paste, crushed tomatoes, and broth.
    • Add oregano, basil, red pepper flakes, salt, and black pepper.
    • Simmer uncovered for 10–15 minutes, stirring occasionally.
  4. Combine & Serve:
    • Toss the cooked pasta into the sauce and mix well.
    • Garnish with Parmesan cheese and fresh parsley.
    • Serve hot and enjoy!
