Ingredients

  • 1/2 cup uncooked jasmine rice
  • 1 small chicken breast (about 4–5 oz), diced
  • 1/3 cup coconut milk
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped spinach (optional)
  • 1 garlic clove, minced
  • 1/2 tsp grated ginger
  • 1 tsp olive oil
  • Salt & pepper to taste
  • Fresh cilantro or lime wedge for garnish (optional)

Notes

Cooking Steps:
  1. Cook rice according to package instructions. Set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and ginger; sauté for 30 seconds.
  3. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 5–6 minutes.
  4. Stir in bell pepper and spinach, cook for 2 minutes.
  5. Pour in coconut milk and simmer for another 3–4 minutes until slightly thickened.
  6. Serve coconut chicken mixture over rice. Garnish with cilantro or lime if desired.
