Filling:
- ½ cup mixed frozen vegetables (peas, carrots, corn, green beans)
- ¼ cup diced potato (peeled and pre-boiled or microwaved)
- ¼ cup vegetable broth
- 2 tbsp milk or plant-based milk
- 1 tsp flour
- 1 tbsp butter or olive oil
- Salt and pepper to taste
- Pinch of dried thyme or mixed herbs
Biscuit Topping:
- ¼ cup all-purpose flour
- ¼ tsp baking powder
- Pinch of salt
- 1 tbsp cold butter (cubed)
- 2 tbsp milk
